  • Peanut oil, for frying


  1. Place chicken pieces in a large bowl or ziptop bag. Cover with buttermilk and marinate 2 hours to overnight (this is optional but definitely recommended).
  2. Remove from buttermilk and pat dry with a paper towel. Sprinkle lightly with salt, pepper and garlic powder. Set aside.
  3. Place a rack over a rimmed baking sheet and set aside. Whisk together the eggs, water and hot sauce. In another bowl, whisk together the flour, salt, pepper, paprika and cayenne pepper. 
  4. Dredge the chicken in the flour mixture then coat it in the egg mixture. Return to the flour mixture and coat. Place chicken on the rack. Once all pieces are coated, place in the refrigerator for 30 minutes. This step helps the coating stick to the chicken.
  5. Meanwhile, heat the peanut oil to 350 degrees F. Working in batches, fry chicken for about 15 to 18 minutes, or until no longer pink and cooked through. Keep in mind that dark meat will take a little longer to cook than white meat. Watch the wings as they may cook in less than 15 minutes. Place chicken on a clean rack to help keep it crispy as you cook another batch.

  1. 4 pounds of chicken pieces (legs, wings, breasts, or a combination)
  2. 2 cups buttermilk

  7. 1 tablespoon garlic powder

  9. 1 tablespoon salt
  10. 1 teaspoon black pepper
  11. Vegetable oil, for frying


  • In a large bowl, combine the buttermilk and hot sauce. Add the chicken pieces to the bowl and ensure they are fully coated in the buttermilk mixture. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow the chicken to marinate and tenderize.
  • In another large bowl, whisk together the flour, paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. This will be the seasoned flour mixture for coating the chicken.
  • Heat vegetable oil in a deep fryer or large skillet to a temperature of 350°F (175°C).
  • Remove the chicken pieces from the buttermilk marinade, allowing any excess liquid to drip off. One at a time, coat the chicken pieces in the seasoned flour mixture, ensuring they are fully coated and gently shake off any excess flour.
  • Carefully place the coated chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry the chicken in batches for about 12-15 minutes, turning occasionally, until they are golden brown and cooked through. Internal temperature should reach 165°F (74°C).
  • Once cooked, transfer the chicken to a wire rack or paper towels to drain any excess oil.
