Lemon Spaghetti With Spinach

Ingredients:

  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • 250 g spaghetti
  • 250 ml coconut milk (from the can)
  • 600 ml vegetable stock
  • Juice of 1/2 organic lemon, freshly squeezed
  • 250 g fresh leaf spinach
  • 1 tsp freshly grated lemon zest
  • Salt
  • Pepper
  • Chili flakes (optional)
  • Lemon spaghetti with spinach

Instructions:

  1. Heat a little oil in a large saucepan and sweat the onion for about 3 minutes. Then fry the garlic for another minute.
  2. Add the uncooked spaghetti, vegetable broth, coconut milk and lemon juice. Once the spaghetti has softened a little, gently press into the liquid with a wooden spoon. Cook over a medium heat for 15-18 minutes.
  3. Once the spaghetti al dente are stir in the spinach and the grated lemon zest. Cook for 2 minutes, then season with salt, pepper and chilli flakes.
