Keto Bacon Cheeseburger Casserole


1. Keto Bacon Cheeseburger Casserole:


Ingredients:


  1. 2 lbs ground beef

  3. 1 cup shredded cheddar cheese
  4. 1/2 cup mayonnaise
  5. 1/2 cup diced onion

Instructions:

  • Brown ground beef in a large skillet over medium-high heat. Drain any excess fat.
  • Add cooked and crumbled bacon, diced onion, diced tomato, yellow mustard, Worcestershire sauce, salt, and pepper to the skillet. Stir to combine.

  7. 1/4 cup unsweetened almond milk
  8. 2 tbsp Worcestershire sauce
  9. 2 tbsp tomato paste
  10. Salt and pepper to taste


Instructions:


  • Preheat oven to 350°F.
  • In a large bowl, mix together ground beef, almond flour, grated parmesan cheese, eggs, diced onion, minced garlic, almond milk, Worcestershire sauce, tomato paste, salt, and pepper until well combined.
  • Transfer the beef mixture to a loaf pan and smooth out the top.
  • Bake in the oven for 45-50 minutes until cooked through.
  • Let the meatloaf cool for 5-10 minutes before slicing and serving.


3. Keto Chicken Alfredo:


Ingredients:


  1. 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  2. 2 tbsp olive oil
  3. 1/4 cup butter
  4. 1/2 cup heavy cream
  5. 1/2 cup grated parmesan cheese
  6. 2 cloves garlic, minced
  7. 1 tbsp chopped parsley
  8. Salt and pepper to taste
  9. Optional: zucchini noodles or spaghetti squash for serving


Instructions:


  • Heat olive oil in a large skillet over medium-high heat.
  • Add chicken pieces to the skillet and cook until browned on all sides, about 7-10 minutes.
  • Remove chicken from the skillet and set aside.
  • In the same skillet, melt butter over medium heat.
  • Add minced garlic to the skillet and cook for 1-2 minutes until fragrant.
  • Pour in heavy cream and grated parmesan cheese. Stir to combine.
